Spoon Corn Bread

Ingredients
1 cup cornmeal2 Tbsp. butter4 cups skim milk4 eggs, beaten1/2 tsp. salt
Directions
Preheat oven to 400 F.

In saucepan, combine 3 cups of the milk, the cornmeal, and the butter. Bring to a boil, stirring constantly. When thickened, remove from heat.

In separate bowl, mix together eggs, remaining 1 cup of milk, and salt. Add to cornmeal mixture and beat well.

Pour into lightly greased 2 quart casserole and bake for 45 minutes.
