Ingredients
*Bumble Bee Alaska Sockeye Red salmon large canCelery, raw, .15 cup, diced Onions, raw, .20 cup, chopped Capers, canned, 1 tbsp, drained (optional)Peppers, sweet, red, raw, sliced, .25 cup Yellow Sweet Corn, Canned, .25 cup *President's Choice Prepared Dijon Mustard, 2 tsp Kraft Mayo Light Mayonnaise (Mayo), 1.5 tbsp.Dill weed, dried, .5 tbsp garlic powderOld Bay SeasoningPepperBread Crumbs (to dip in)OatmealEgg, raw
Directions
Saute vegetables. Add to other ingredients (except bread crumbs) and mix together. Dip lightly in bread crumbs and pan fry for five minutes on each side until warmed to the center of the salmon cake. This can be served plain or with salsa or sour cream, dill, avocado sauce on the side.

    I made this recipe and added 2 tbls of dijon mustard, additional spices, only used 2 eggs and just over a 1/3 cup of bread crumbs. Kids loved it and easy to make. - 1/15/09
