Vegan Chocolate Chip Oatmeal Cookies

Ingredients
1/3 c Maranatha All Natural Peanut Butter2 T canola oil1 c sugar (not regular white sugar, otherwise these cookies aren't vegan)1 tsp vanilla1 c whole wheat flour1/2 tsp baking soda1/2 tsp + 1/4 tsp salt1 c rolled oats1/2 c choc chipsoptional 1/2 c nuts (not in nutritional info)
Directions
Preheat oven at 425 degrees.

Whisk together first five ingredients until smooth.

In a separate bowl, combine flour, soda, salt, and oats.

Add dry ingredients to mix, stir to combine. Add chocolate chips.

Drop by large spoonfuls onto baking sheet.

Bake for 8 minutes, or until the tops just begin to crack.

Cool on baking sheet 10 minutes, then, if you don't eat them like I do, you can transfer the cookies to a plate or wire rack to cool.

Makes about 16 good sized cookies.
