Slow Cooker Chili

Ingredients
1 lb lean ground beef2 cups chopped onion1 15oz can red kidney beans1 15oz can chickpeas4 14.5oz cans crushed tomatoes 1/2 cup diced red bell pepper1/2 cup diced green bell pepper1/2 cup diced yellow bell pepper1 tablespoon chili powder2 cups tomato veggie cocktail juiceSalt and pepper to taste
Directions
Brown the ground beef in a skillet until cooked through. Add the beef and all other ingredients to a 3.5-quart slow cooker, mix together and cook on low for 6-8 hours (you can start this before work and it will be ready for dinner!). Add salt and pepper to taste, serve with a sprinkling of low-fat grated cheese or sour cream on top for garnish.
