Ingredients
1/2 Acorn squash16 ounces chicken broth1/4 cup shredded cheese2 tablespoons low fat sour creamonion powdergarlic saltwhite pepper
Directions
cut skin off Squash and cut in small peices
boil sqaush in chicken until soft, mash sqaush while cooking until creamy, add shreeded cheese, sour cream, onion powder, garlic salt and white pepper, continue stirring while cooking.

    Thanks for sharing this. Although the soup came out ok. I prefer acorn squash with the sweeter taste. I may play with this receipe to see if I can't get a sweeter version. - 2/23/09
