Crockpot Black Bean Soup

Ingredients
3 carrots, chopped3 celery stalks, chopped1 onion, chopped2 cloves garlic, chopped1 red or green pepper, chopped1.5 c dried black beans, rinsed1-2 T Chili powder 1 T Cumin1 t Salt
Directions
Add all ingredients to crockpot. Cover with water to 2" above beans.

Cook on low for 8 hours.

Serve with cornbread and a salad. You can top the soup with a sprinkling of shredded cheddar cheese and a dollop of sour cream. (Not included in nutrition information.)

    I made this today, no one would eat it. The black beans turned all the veggies black and it looked awful. I tasted it and it was ok, just couldn't get over how gross it looked. I won't make again. - 2/4/09

    I have never had that happen to me. Thanks for letting me know... I will watch for it. I would imagine that wouldn't look very appetizing!

    I love black bean soup and this was a good one. I enjoyed the other vegetables in it (I've only eaten it with celery). I like mine with a bit of bite, though, so I think next time I'll add some cilantro. Thanks! - 2/1/09
