Ingredients
1 cup Hodgson Mill Multi Grain Hot Cereal1 cup Hodgson Mill White Flour, unbleached1 TBSP baking powder1/2 tsp baking soda1/2 tsp salt1/2 cup sugar1 cup carrots, shredded1 cup apples, peeled & chopped1/2 cup milk (can be skim)2 eggs (or 4 egg whites)1/4 cup vegetable oil1 tsp vanilla extract1/2 cup pecans, chopped
Directions
Makes 12 muffins.

Preheat oven to 400F. Line 12 muffin cups with paper liners or grease muffin tin. Blend dry ingredients together. Add remaining ingredients and mix until blended. Batter will be thick; spoon into muffin cups. Bake 20-22 minutes or until golden brown.
