Carrot Apple Nutty Muffins

1 1/2 cups whole-wheat flour 1 teaspoon baking soda1 teaspoon baking powder1 1/2 teaspoons cinnamon1/4 teaspoon nutmeg1/4 teaspoon ginger1/2 cup brown sugar 1 egg, slightly beaten2/3 cup unsweetened applesauce2 teaspoons vanilla1 Tbsp flax oil1/2 cup unsweetened soy milk1 small to medium apple, grated1 1/2 cups grated carrots1/2 cup chopped hazelnuts
Preheat oven to 375F.
Mix all dry ingredients in a bowl (all items on the list before the egg). Add carrot and apple and nuts, and stir well so dry mix coats them.
Mix all wet ingredients in a separate bowl. Add wet to dry, stirring to mix but do not over mix! Over mixed muffins will be tough and chewy.
Spray 12 muffin cups then distribute muffin mix evenly among them. Bake for 20 to 25 minutes, testing for doneness with a toothpick in a middle-of-the-pan muffin.
