Ingredients
2 Roma tomatoes, slicedhalf of an eggplant, peeled and thin slices3 cups zucchini, sliced8 cloves garlic, minced1 T olive oil1 T each of basil and marjoramparsley (5 sprigs calculated)Salt to taste (4 dashes calculated)
Directions
heat oil in pan, add garlic and saute till heated through. Add all other ingredients and saute till cooked through and soft. Serve with rice or couscous.
