Low Fat Mac and Cheese

Ingredients
3 T. Butter3 T. Flour1.5 C, 1% Milk1/2 C. Fat Free Grated Cheese8 oz Cabot 75% Reduced Fat Cheddar Cheese, grated4 slices American Cheese1/2 tsp. salt1/2 tsp pepper1/4 tsp Onion PowderPinch of Nutmeg1lb box Pasta of your choice, cooked
Directions
Melt butter in large sauce pan. Add flour, stir and cook over low heat until slightly light brown. Slowly stir in Milk and stir until smooth. Add cheeses half each at a time, stiring to melt after each addition. Add to cooked pasta, stir.

Makes 12 servings.

** Exchange Olive Oil for the butter for a healthier fat and skim milk for 1% for less fat!
