BBQ Chicken Fingers Over Spinach

1/4 Cup Grated Parmesan Cheese1/4 tsp. ground black pepper1/8 tsp. ground cayenne (red) pepper1 lb. boneless, skinless chicken breast, cut into strips1/2 Cup Kraft Carbwell Original BBQ Sauce1/2 Cup Low Fat Cheddar or Colby Cheese1 bag, 6oz. baby spinach leaves (about 7 cups)
Preheat oven to 400*. Mix parm. cheese and other seasonings. Add chicken to bowl, toss and coat evenly. Place in ungreased shallow baking pan. Bake 10-15 min or until chicken is cooked. Drizzle BBQ sauce over chicken, sprinkle with shredded cheese, and bake until cheese is melted. Serve over baby spinach leaves. Serves 6.
