Moroccan-style Chicken and Chickpea Stew

1tbsp olive oil2 garlic cloves, chopped2 medium onions, peeled and sliced2 chicken breasts (no bone or skin), chopped into bitesize pieces1 small bunch coriander, chopped10g mint, chopped1tsp chilli powder1tsp ground cumin1/2tsp ground cinnamon1 can (410g) chopped tomatoes1 can (410g) no salt chickpeas (drained and rinsed)75g dried apricots, chopped25g flaked almondsa veg or chicken stock cube
Put oil, garlic, onions, chicken, herbs and spices in a large saucepan. Cook for 5 mins, stirring regularly.
Add all the other ingredients, refill the tomato can halfway with cold water and pour into the pan. Bring to the boil then reduce the heat and simmer gently for 25-30mins. Stir regularly.
Serve with whatever you like!
