Apricot Muffins

1 1/2 C All Purpose Flour 1 1/2 C Whole Wheat Flour2 tsp Cinnamon, ground1 tsp Baking Soda1 tsp salt1 1/4 C Applesauce, unsweetened2 Eggs, lightly beaten 1 1/4 C Granulated Sugar2 Cups Chopped Apricots
Preheat oven to 400 degrees. Line muffin pan with paper liners.
Mix flours, cinnamon, salt, and baking soda in a large bowl. Make a well in the center.
In another bowl whisk together, sugar, eggs, and applesauce until thoroughly combined. Pour into well in the dry ingredients. Stir together just until moistened. Fold in chopped apricots. Divide mixture among 22 muffin cups.
Bake 15 to 20 minutes until toothpick comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely.
1 serving is equal to 1 muffin.
