Chicken Schnitzel

Ingredients
4 4oz pieces of boneless skinless chicken breast3/4 cup Ian's Italian Panko bread crumbs4 tsp canola oil1 egg1 tsp mustard1 lemon
Directions
Beat egg with mustard in one bowl. Place breadcrumbs in second bowl. Heat nonstick skillet. Dip a piece of chicken in egg and then roll in breadcrumbs. Set aside and repeat with remaining chicken. Add 1 tsp of oil to pan, swirl and add two pieces of breaded chicken. Cook 5 minutes until golden brown and flip. Add 1 more tsp oil and swirl in pan with chicken. Cook 5 minutes longer or until golden brown. Keep warm and repeat with last two pieces of chicken. Serve with wedges of lemon.
