Lindy's Mahi-Mahi Fish Tacos

Ingredients
1 mango diced, if out of season see freezer section at your grocery store2 plum tomatoes1 small red onion1/2 jalapenos, diced3 Tbsp, fresh cilantro2 limes, juicedsalt and pepper 12 oz mahi mahi uncooked1 tbsp olive oil12 romaine lettuce leaves
Directions
Combine the mango, tomatoes, jalapeno, cilantro and lime juice in a medium mixing bowl and season with salt and pepper. Season the fish with salt and pepper and brush with olive oil. Grill on george foreman grill roughly 4-6 minutes until just opaque in the center. Set aside to cool.

When slightly cool, chop into large chunks. Add to the reserved salsa aand fold carefully as to not break up the fish. Add mixture to the middle of the lettuce leaves and roll.

Note: I have found that HEB has a mango salsa which now makes these even simpler! Enjoy. If you need a little extra fat in your diet they are great with avocado, however that is not included in caloric calculation.

    We tried this recipe last night. I hate to say it, but it was really bad. Maybe it is because the fish is served cold in this dish. Every kind of fish tacos I've tried before has been warm. The fish "smell" was over powering, and it was just bad. We ended up dipping it in various sauces to eat it. - 3/6/09

    Just what I was looking for. I tried fish tacos for the first time in Hawaii and they are awesome..I didn't think I would find a recipe that would take me back there! I used warmed whole grain tortillas instead of lettuce leaves. - 2/27/09
