Puttanesca Sauce

Ingredients
1 can crushed tomatoes4 cloves garlic1/2 cup black olives, chopped2 tbs capers1 tbs olive oil1 can anchovies, chopped1 tbs red pepper flakes (or to taste)1/2 cup fresh chopped parsley
Directions
In a skillet, add the anchovies with the oil, the capers, the chopped tomatoes, the olives and the pepper.

Simmer about 15 minutes
.
Remove from the heat and add the parsley, finely chopped.

Serve over pasta.

    The story is not apocryphal, it is fact. "Puttanesca" in Italian means "In the style of the prostitute". When I make this I use fresh tuna (because my family won't eat anchovies) and fresh tomatoes (to reduce sodium intake). Plum tomatoes are best; you need about two pounds. Thanks for sharing! - 2/9/09

    It was very good. Loved it. I added meatballs, which if I did it again I would instead add chicken breast. Works better with sauce I think. - 12/10/09

    I'll make it again! Next time I won't use as much red pepper flakes, my husband and I love spice so but it was too much! - 2/22/09
