Eight (8) Large Eggs4 oz. evaporated skim milk1 oz. of goat cheese, crumbled
Beat eggs, milk, and salt and pour into preheated oiled skillet. Crumble goat cheese throughout eggs. Turn on very low heat and cover, stirring regularly to prevent sticking. Cook until eggs are done (about 10 minutes). Serves 4.
