Potato Soup with Ham

4 cups potatoes, peeled and cubed6 Tbs butter6 Tbs flour (I use white) 1 med onion, chooped finecayenne pepper (to taste)black pepper (to taste)5 cups milk (1%)1/2 tsp salt2 cups ham cubed2 cups low fat shredded cheddar cheese
Cook potatoes in stock pot until tender, reserving 1 cup of the potato water.
In same stock pot cook onion and butter for 3 minutes, add in flour and cook for 3 more minutes.
Mix in cayenne pepper and black pepper.
Return potatoes to pot and add in reserved water, milk, and salt.
Stir well and add in the ham and cheese.
Heat though until hot and cheese is melted.
Makes about 10 1 cup servings

Very nice soup. Good consistency and fairly easy to make. I added carrots and left out the onions because my kids won't eat them. Kids both ate it and said it was good. My husband said it reminded him of creamed chipped beef because of the milky base. Will more than likely make again. - 2/5/09
