Crockpot Turkey breast

Ingredients
Turkey (light meat), 907 grams (approx. 2 lbs. of a turkey breast half, with the bone and skin removed)Baby Carrots, raw, 18 medium Onions, raw, .5 cup, chopped Swanson Chicken Broth 99% Fat Free, 1 cup Salt, 1 dash Pepper, black, 1 dash Celery, raw, .25 cup, diced
Directions
I used a 4 quart crockpot and a 2 pound turkey breast half.

Unwrap the turkey breast and pat it dry with paper towels. Remove bone and skin. Wash hands.

Salt and pepper the breast liberally.

Cut up an onion and celery coarsely and place pieces down on bottom of crockpot. Add turkey breast. Place carrots on top of meat.

Pour the chicken broth over the top.

Cover and cook on low for 3-5 hours, or on high for 2-4. Use a meat thermometer to test doneness--it should register at 170°.

Remove from crockpot, and let sit for about 20 minutes before carving. The meat will be much more tender than if cooked in an oven.

    Wow, this cooked fast even for a crockpot--2 hrs and done! Carrots didn't have enough time to cook however (I used whole carrots cut to baby-size). I added an herb rub with sage, thyme, sea salt, and canola oil. Very moist and delicious! - 2/17/09
