California Country Black Bean Soup

12 oz. black beans 1 peeled lemon, thick sliced 1 medium onion, diced 1/4 t. ground cumin 2 fresh jalapeno, seeded, minced 1 t. dry marjoram leaves 2 t. dry sherry 2 quarts unsalted chicken or vegetable broth 1 slice bacon, diced small 2 cloves garlic, minced 1 T. chili powder 1 Cup Chopped Red Pepper ½ Cup Chopped Cilantro1/2 t. salt
1. Soak beans overnight covered by 3 inches of water.
2. Drain beans and simmer in stock with lemon slices until beans are tender.
3. In frying pan, cook bacon until fat rendered over medium heat, add onion and cumin. Cook until onion is soft.
4. Add onion mixture, garlic, chili powder, jalapeno, red pepper, marjoram and cilantro salt to beans, simmer 15 minutes.
5. Remove lemon.
6. Remove 1/3 of bean mixture, puree, return to soup.
7. Add sherry.
8. Serve.
