Healthy Stuffed Artichokes

4 artichokes2 cups (cooked) couscousvegetable brothparmesan cheese (optional)
Prepare artichokes for steaming by rinsing and cutting tips. Steam for 45 minute in deep steaming pot over mixture of vegetable broth and water (veggie broth adds flavor but isn't necessary). After steaming, remove inner/inedible leaves (purple) and place, tightly, in a baking pan. Stuff each artichoke with couscous and sprinkle with parmesan cheese (optional). Bake for 20-30 minutes ate 350. For additional flavor, use pre-seasoned couscous or add chopped vegetables to couscous.
