Crustless Spinach and Sausage Quiche

Ingredients
1 12 oz pkg of Jimmy Dean reduced fat sausage5 large eggs, slightly beaten1 1/2 cups 1% milk1 cup grated swiss cheese1 pkg Knorr's Vegetable Soup Mix1 10 oz pkg frozen chopped spinach
Directions
Cook sausage in a non stick skillet until browned, crumbling the sausage as it cooks. Spray a 9" deep dish pie plate with cooking spray then layer the cooked sausage on the bottom. In a large bowl, combine eggs, milk, cheese, soup mix and spinach. Spoon over the sausage. Bake in a 375 degree oven for 50 minutes or until knife inserted halfway between center and edge comes out clean.

Serves 12 (cut pie plate into 12 portions)

May also be made in muffin tins for 12 individual servings.

    I made this for a brunch at my house a couple of Sunday's ago and there wasn't a bite left. Everyone raved that something so good could have such minimal calories. I even forgot to add the sausage which made the calories even less and it still went really fast. BRAVO DWAN!!! - 3/4/09
