Shrimp and Spinach 'Alfredo'

2 servings whole grain Pasta8oz Shrimp, cooked & de-veined1/2 tsp Cayenne Pepper1/4 tsp Salt1/4 tsp Pepper2 Tablespoons Olive Oil4 medium cloves of Garlic, finely minced2 tablespoons Shallot, finely minced1 tablespoon fresh Dill, finely chopped1/2 teaspoon Oregano (dried)1/2 cup shredded Parmesan1/2 cup Non-Fat Plain Yogurt1 ounce Neufchatel Cheese1/4 cup Milk (1%)1 cup frozen Spinach
1. Prepare Pasta according to package instructions. Reserve 1/8 cup of water then drain pasta and set aside.
2. Remove tails from shrimp, place in small bowl and add Cayenne pepper, Black Pepper and Salt, tossing shrimp to coat evenly.
3. Place olive oil into a skillet and heat over medium to medium high heat.
4. Add Shallots and Garlic to skillet and cook over medium heat until golden brown. Be careful not to burn the garlic.
5. Add dill and oregano to garlic mixture and heat an additional 2 minutes.
6. Combine Yogurt, Neufchatel Cheese, Milk and water with the garlic and herb mixture in skillet. Heat over medium for about 2 minutes or until melted and well combined.
7. Add Shrimp to skillet and allow to cook approximately 3 minutes.
8. Stir frozen spinach into mixture, stirring constantly until mixture is heated through.
9. Add drained Pasta and continue to stir to coat the pasta evenly. Allow to cook 5 to 7 minutes.
10. Remove from heat and serve. Top with additional shredded parmesan if desired.
