1/2 c soy yogurt2/3 c soy milk1/4 c + 2 tbsp applesauce1 tbsp oil1/2 c sugar2 tbsp agave nectar1 1/2 tsp vanilla extract1/2 c all-purpose flour1/2 c whole wheat pastry flour1/4 c cocoa powder2 tbsp cornstarch3/4 tsp baking powder1/2 tsp baking soda1/4 tsp salt
Preheat the oven to 350F/175C and line a muffin pan with cupcake liners.
In a large bowl, whisk together yogurt, soy milk, applesauce, oil, sweeteners, and extracts. Sift in the dry ingredients. Fill liners three quarters full. Bake 22-24 minutes or until a knife or toothpick inserted in the center of one comes out clean. Transfer to a cooling rack to cool completely.
Serve with fresh fruit or drizzled with icing.
