pistachio nuts, salted or unsalted (I used salted) finely ground in the food processorchicken breast cutlets (I use the very thin cutlets)
Grind the nuts in the food processor until they are the consistency of bread crumbs. Mix some salt and pepper in with the nuts and pour onto a plate. Dredge the chicken in the pistachio nuts just as you would dredge it in breading. Place chicken in a baking dish coated with non stick cooking spray. Bake in a 350 degree oven for approx 30-40 minutes, which depends on the thickness of your chicken.
