Hearty Veggie Beef Soup

Ingredients

1.5 lbs chuck roast1 tbl olive oil2 cups beef broth1 lg can petite diced tomatoes(undrained)1 medium onion, chopped1 lg can green beans (or 2 small cans)1 sm can corn3 cups frozen peas and carrots3 cups cabbage, chopped3-4 cups waterSalt and pepper to taste
Heat oil in dutch oven. Add chuck roast and brown on both sides.
Add beef broth, cover and simmer for an hour or until meat is tender.
Remove meat and let cool. Chop and return to pan.
Add tomatoes and onion. Let simmer for 30 min.
Add remaining ingredients and simmer another 30 or more to let flavors blend.
Serving Size: 1 cup
