Curried Pork Tenderloin in Apple Cider

Ingredients
16 ounces pork tenderloin (cut into 6 peices)3 tablespoons medium curry powder1 tablespoon extra virgin olive oil2 1/2 cups onions, chopped2 cups of apple cider or natural apple juice2 apples, chopped (preferrably tart apples)1 tablespoon cornstarch
Directions
Season pork with curry powder and let stand 15 to 30 minutes.

Over medium heat, add olive oil to a skillet and brown both sides of the pork tenderloin. (about 5 minutes on each side)

Remove pork and set aside.

Add onions and saute until soft and golden. Add 1 1/2 cups of cider, reduce and simmer until half the lquid has evaporated.

Mix remaining cider and cornstarch, and add to skillet. Add chopped apples. Let the sauce thicken for about 2-5 minutes, stirring frequently.

Return pork to the skillet and cook for another 10 minutes flipping the pork over, at the 5 minute mark.
