Mini Turkey Meatloaves

1 lb lean ground turkey1/3 cup whole wheat couscous, dry1 cup finely chopped onion1 cup finely chopped red pepper1 medium zucchini, shredded1 egg, slightly beaten1 T Worcestershire sauce1/2 t black pepper1/4 t saltBBQ sauce, optional
Mix all ingredients together by hand. Do not overwork or meatloaf will become tough. Spray muffin tin (12 count) with cooking spay. Evenly distribute meatloaf mix in muffin tins. Top with BBQ sauce if desired. Bake in 400 degree oven for 25 minutes or until done.
