16 oz. ground turkey, lean1 large can (29 oz) Crushed tomatoes1 can (15 oz) diced tomatoes1 Tbsp. dried Parsley1 tsp. granulated sugar1 tsp. garlic powder1/2 tsp. black pepper1/2 tsp. Oregano1 large egg8 oz. cottage cheese 2%1/4 cup Parmesan cheese3 whole wheat flour tortillas4 oz Shredded Mozzarella cheese, part skim
In a large skillet, brown ground turkey. Add crushed tomatoes and diced tomatoes, parsley, sugar, garlic, pepper, and oregano.
In a small bowl combine egg, cottage cheese, and parmesan cheese.
In a 13X9 pan (aluminum works best) cover the bottom with a thin layer of the tomato/meat mixture. Break tortillas in half and place 3 halves on top. Add cottage cheese mixture. Continue to layer tomato/meat mixture and tortillas ending with tomato/meat mixture.
Cover with foil and Bake at 350 degrees for 20-25 minutes until bubbly. Top with Mozzarella and remove foil. Bake 5 minutes more until cheese is melted. Let stand 10 minutes and cut into 12 squares. Makes 12 servings.

This was surprisingly excellent. I omitted the 2nd 15oz can of tomatoes, really the 29oz was plenty and more would have made this really mushy. I had to drain off some liquid as it was. I also added more italian spices because otherwise it was a little bland. But my family loved it! - 2/25/09
