Chocolate Choc Chip Zucchini Muffins

Ingredients
1.75 c whole wheat or white whole wheat flour.5 c soy flour.5 c flax seed meal.25 c cocoa powder1 tsp salt1 tsp baking soda.5 baking powder8 tsp vital wheat gluten.25 c butter, softened.25 c canola oil.5 c unsweetened applesauce1 c plus 1 tbsp organic sugar2 eggs.75 c skim milk, soured w/ 1 tsp vinegar2 cups shredded zuchinni.75 c semi sweet mini choc chips
Directions
Shred zucchini to equal 2 cups and set aside. Sift all dry ingredients. Sour the milk with vinegar and set aside. Cream butter and oil. Add organic sugar. Add applesauce and mix well. Add eggs, beating after each. Add milk and mix well. Add dry ingredients in two batches and mix until just combined. Fold in zucchini and chips. Bake @ 375 degrees for 17 minutes. Makes 24 muffins.
