Penne with Shrimp and Mushrooms

1 tbsp unsalted stick margarine1 onion chopped4 garlic cloves minced1 lb medium shrimp peeled and deveined(i buy the ez peel raw shrimp frozen when they are on sale)1/2 cup minced fresh parsley2 tbsp fresh lemon juice1/4 tsp ground black pepper4 cups hot cooked penne (about 3c uncooked)
serving equals 1cup of cooked pasta with 1/4 of the shrimp mixture.
1.In a lg nonstick skillet, melt the margarine. Add onion and garlic, cook until softened (3 min)
2.Add shrimp and mushrooms. Cook until shrimp are pink and mushrooms have released all their juices.(6-8 min)
3.Stir in parsley lemon juice and pepper. Serve penne topped with shrimp mixture.
