Veggi-filled quesadillas

2 small green and/or red sweet peppers, cut into thin strips1 small red onion, cut into thin strips2tsp olive oil1/2 tsp ground cumin1/2tsp. chili powder3tbsp. parsley1/3 cup light cream cheese5 6- to 7-inch flour tortillassalsa ( optional)
Makes 10 servings
Preheat oven to 425. In large nonstick skillet, cook sweet pepper and onion in 1 teaspoon of the hot oil for 3 to 5 minutes or till crisp. Stir in cumin and chili powder. Cook and stir for 1 minute more. Stir in parsley. Set aside.
Spread cream cheese over half of each tortilla. Top with pepper mixture. Fold tortollas in half over pepper mixture , pressing gently.
Place tortillas on large baking sheet. Brush tortillas with remaining oil. Bake for 5 minutes. Cut quesadillas into wedges. Serve warm. If desired, pass salsa
