Oatmeal Bread

Ingredients
4 pkgs. yeast, 4 cups boiling water, 1-1/3 sticks butter, 1 cup honey, 3 tsp salt, 4 eggs, 2 cups oatmeal, 1 cup wheat germ, 2 cups whole wheat flour, 2 cups white flour, preferably unbleached
Directions
Combine 4 cups boiling water, butter honey and salt in a very large bowl. Allow to cool down so it won't kill the yeast! Dissolve the yeast in 1 cup of warm water; set aside. When first mixture has cooled to warm, add eggs and yeast mixture to it. Then add oatmeal, wheat germ, whole wheat flour and stir til mixed. Now you add the white flour a cup at a time and continue to add more until you find it hard to stir. Be sure to use a large bowl as this mixture will rise! Cover bowl with plastic wrap and put in the fridge for a minimum of 2 hours or as long as 10 hours. At this point you will knead the bread for a minute or 2 on a floured surface and cut into 4 pieces, shape and put into greased loaf pans. Cover lightly with a towel and let rise for 2 hours; then bake at 350 degrees for 40 minutes. Delicious and healthy!!!
