L.R. Hoppin John soup

Ingredients
4 cups diced sweet potatoes3 cups chopped onions5 cups chopped celery3 cups chopped red or green sweet peppers2 bay leaves2 T. oil2 lbs. venison sausage5 cups canned or frozen black-eyed peas2 quarts canned tomatoeshot sauce to tasteseasoned salt to taste1 tsp. pepper1/2 T. basil1 tsp. Italian seasoning1 T. chili powder1 tsp. oregano1 tsp. garlic powder2 quarts chicken broth
Directions
In a large bowl, combine sweet potatoes, onions, celery, peppers and bay leaves. Set aside. In a large kettle, brown sausage in oil. Add vegetable mixture. Continue to cook and stir mixture until onion are getting tender. Add remaining ingredients. If kettle is too full, you can add some of the broth later. Bring to a boil. Reduce heat and simmer uncovered until all vegetables are tender. Adjust seasoning to taste. You can easily half the recipe. Makes about 25 cups.

    This sounds tasty. I'd use chorico sausage instead of venison, or maybe chicken sausage. I rarely ever see venison sausage at the store. - 1/21/09
