Lightly Blackened - Potato and Leek Soup

4-5 Medium Potatoes1 Small Leek1/2 Small Onion1 Tbsp Butter (Or other 'oil' product)1 14oz Can - Swanson Chicken Broth (99% Fat Free)6+ Cups Water'Splash' of Milk*.5 tsp Oregano*.5 tsp Black Pepper*.5 tsp Garlic Salt*5 Peppercorns*
Prep time: Depends on speed of chopping.
Cook Time: I want to say less than 2 hrs including prep... but I didn't time myself.
1. Chop Potatoes, you will be mashing them later so whatever size you feel comfortable with is fine. I peeled them, you don't have to if you don't want to. ^.^
2. Place Potatoes and Water in pot, and bring to a boil. Simmer until soft.
3. Chop Leek, and 1/2 Onion. Remember to only use the white and light green parts of the leek, and to wash it.
4. Saute Leek and Onion in 1 Tbsp butter, or whatever you want to substitute. (Here's where I burnt mine... Pay attention to yours if you don't want it burnt. =þ)
5. Strain Potatoes. Place half of Leek/Onion mix into Potatoes. As much chicken broth and water as you feel your soup needs. I used a bit less than 14 oz of each. Add a dash of milk as you like. Mash mixture! XD
6. Add the rest of Leeks and any seasonings you choose to. Bring to a simmer and simmer as long as you like, or just until hot. ^.^
I told the calculator it makes 4 (1 cup) servings, but that depends on how much you want in your serving.
(Also, I added a few chopped pieces of carrot, and a bit of minced garlic to mine. Just for fun. ^.^)
