Ingredients
* Chili powder, 1.50 tsp * Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb) * Ginger Root, 4 tsp * Onions, raw, 2 cup, chopped * Red Ripe Tomatoes, 2 large whole (3" dia) * green chili, small, 2 serving * dhania/corriander powder, 2 tsp * jeera/cumin seeds, 1 tsp * garam masala powder, 1 tsp * fresh corriander, 3 tbsp * hing, 0.13 tsp * canola oil, 2 tbsp
Directions
puncture eggplant, put on cookie sheet; broil on high until smell a faint burn smell (aprox. 30 min). Remove and let cool.

put oil in wok; place in cumin seeds in oil and allow to just start to brown; add chopped onions and brown.

add other spice ingredients and stir for 2-3 min.
add tomatoes and cook until oil separates.

scrape innards of eggplant and add to onion mixture. Cook for 5 min more.
