1.5 lb Chicken Thighs trimmed, 5 thigh, bone and skin removed5 medium Carrots diced1Can Yellow Sweet Corn, drained1Cans Del Monte Diced Tomatoes w/ zesty mild chilies 2 Cans Del Monte No Salt Added Diced Tomatoes1 can Goya Black Beans (rinsed)1/2 Jar Wegmans Roasted Red Pepper Salsa 2 tsp Cumin
Directions
place all ingredients in crockpot, cook on low for 6-8 hours
1 tblsp corn starch mixed with cold water to thicken at end
Serve over rice
