Quinoa and Mushroom Skillet

Ingredients
Olive Oil, 1.5 tbsps1 medium-sized red onions1 cup quinoa2 cups low sodium vegetable broth12 oz. sliced baby bella mushrooms
Directions
1. Heat oil in a large skillet over medium heat. Add onion and cook, stirring often, until golden.
2. Stir in quinoa and cook, stirring often, 1-2 minutes, until lightly toasted. Pour in stock.
3. Stir in mushrooms, cover, and cook 15 minutes or until stock is absorbed. Season with salt and pepper. Serve hot.
