Cayenne Snapper

Ingredients
Paprika, 1 tsp Pepper, red or cayenne, 1 tsp Pepper, black, 1 tsp Thyme, ground, 1 tsp Basil, 1 tsp Garlic powder, 1 tsp Oregano, ground, 1 tbsp I cant believe its not butter, 2 tbsp Extra Virgin Olive Oil, 1 tbsp Snapper (fish), 450 grams
Directions
Get 3 small fillets, and each fillet is a serving! Side it with a spinach saute and 2tbs mashed potatoes= really filling tastebud heaven, perfect for your diet :D

1. On a large piece of wax paper, mix together paprika, cayenne, black pepper, onion powder, thyme, basil, garlic, and oregano.
2. In a small saucepan over medium heat, melt butter with oil.
3. Brush both sides of snapper fillets with butter mixture, reserve remaining.
4. Coat both sides of fillets with seasoning mixture.
5. Heat a large cast iron skillet over high heat until a drop of water sizzles on it.
6. Drizzle half of remaining butter mixture on one side of the fillets and place fillets butter side down in pan.
7. Cook over high heat until the fish is deeply browned.

    This was quick and easy to make. We did not have snapper, so I made it with halibut and it was very tasty. This is different from what I usually do with fish, and a welcome change. I added a Tbsp. of whole wheat flour to the spice mix to the spice mix to help it stick to the fish. - 6/26/07

    I used 1 T oil and 1 T smart balance and that was plenty..could have probably gotten by with just cooking spray in the non stick pan. This was very good! - 8/1/09

    The instructions were a little wonky, but I did my best and it turned out great! I had to add a little more oil to the pan as it cooked. The rub is really delicious and quite spicy, and next time I'd use less cayenne/red pepper. - 1/3/08
