Chicken Broccoli Casserole

Ingredients
1 box Stovetop Dressing Mix1 3/4 cups chicken broth2 tbsp. 0 calorie butter spray5 cups broccoli, chopped3 cups skinless, boneless chicken breast1 can Campbell's 98% fat-free cream of chicken soup1/2 cup non-fat yogurt1/2 cup Hellman's light mayonnaise1 tsp. curry powder1 cup 2% fat cheddar cheese, shredded
Directions
Cover chicken breast with water and cook until tender. Chop chicken into chunks and mix with chopped broccoli. Stir together cream of chicken soup, non-fat yogurt, light mayonnaise,1/4 cup chicken broth, and curry powder. Mix Stovetop Dressing mix with 1 1/2 cups chicken broth and 2 tbsp butter spray. In a 9 X 13 pan, layer the dressing mix, then the chicken and broccoli. Pour the sauce over the top and sprinkle with the cheese. Bake at 350 for 30 minutes, or until hot throughout.

    Although this is a low cal recipe (awesome) look at the other nutritional values. Sodium is sky high for 1 serving because of the cream of chicken soup and chicken broth. Try using a homemade stock (less sodium) and cream rather than these high sodium products, which counteract the low cal. . . - 10/31/14
