Maui Pickled Onions

Ingredients
3 lb. Sweet or Yellow Onions, cut in quarters(add 1/4 cup Hawaiian/ or Kosher Salt and let sit for 2 hours)1 cup vinegar1/2 cup water1 2/3 cup sugar1 T. mustard seed1 1/2 t. celery seed
Directions
Put onions in gallon jar. Boil vinegar, water, sugar, and mustard seed for 5 minutes. Remove from heat; add celery seed. Pour hot vinegar mixture over onions in jar. Cool and refrigerate.

Keeps well for months in frig.
