Chicken Laksa

Ingredients
1 lge single chicken breast1 tbsp olive oil3 cloves garlic, chopped1 tbsp grated fresh ginger1-2tsp sweet chilli sauce100gms green beans (or snowpeas), cut into even lengths1.5 tsp coriander, ground1.5 cups light coconut milk (1 can)1 tbsp fish sauce750mls chicken stock300gms Udon noodlessalt & pepper
Directions
Slice the chicken into thin strips and cook quickly in a little oil in a wok or saucepan. Remove and set aside. To the pan add the garlic, ginger, chilli sauce and beads or snowpeas. Cook for a minute or so.

Mix in the coriander, light coconut milk and fish sauce, then add the stock. Bring to a simmer and add the noodles. Simmer 3-4 minutes until the noodles are cooked.

Season and serve in bowls with a spoon and fork.
