Spicy Tofu Scramble

1 block extra firm tofu1 bunch kale2 cups fresh mushrooms1 red bell pepper1 tbsp paprika1 tbsp cayenne pepper1 tbsp chili powder 2 tbsp honey (or agave nectar)1/2 tbsp garlic powder
Drain tofu, and crumble with a fork. Chop vegetables into bite sized pieces.
In a non-stick pan, cook kale, mushrooms, and bell pepper in 1/4 cup water. When kale is wilted, add tofu. Sprinkle spices on top of mixture. Cook until tofu is heated through and spices are evenly distributed. Drizzle honey over mixture, and stir until combined. Serve immediately.
Makes two large servings.
