Chicken Parmigiana

1 pound boneless, skinless chicken breast2 large egg whites1 tsp. olive oil1 1/2 cup canned tomato sauce1/2 cup part skim shredded mozzarella cheese1/2 cup italian bread crumbs1 tbsp. parmesan cheese, grated
1. Preheat oven to 350. Coat an 8-inch sauce pan with cooking spray.
2. Dip chicken into egg whites and turn to coat. Then mix bread crumbs and parmesan cheese. Coat evenly.
3. Heat oil in a large skillet and add chicken. Cook until lightly browned and no longer pink in the center. (about 4 mins per side)
4. Pour 1/2 cup of sauce into prepared baking dish. Place chicken in the dish and pour remaining sauce evenly over the top. Sprinkle with mozzarella and bake until bubbly. (about 25 minutes)
