Chicken Orzo Skillet

Ingredients
1 tsp olive oil3/4 lb boneless skinless chicken breasts cut into strips1/2 C chopped onion2 cloves garlic minced1 can low fat cream of chicken or mushroom soup2/3 C water3/4 C orzo1 C shredded carrot1/4 tsp black pepper1 Tbsp chopped fresh basil leaves,plus2 basil leaves cut into fine strips1 tomato diced
Directions
1. Cook chicken until well browned in heated oil at med.high in large skillet. Add onions and garlic. Cook and stir for 3 min.

2. Add all other ingredients except for basil strips and tomato. Mix well and bring to a boil. Reduce heat.

3. Cover and simmer for 15 min. stirring occasionally

4. Add basil strips and tomato and stir to combine.

    Not a fan, sorry. It had very little taste and was overly creamy/mushy. I used cream of mushroom--hopefully cream of chicken would work better. If I had any feta, I may have added that too for just some flavor. - 5/8/13

    It was very good I left out the tomatoes and added peas my kids even ate and wanted more I doubled the recipe and it all went. No leftovers!!!! - 2/12/09
