Banana Nut Bread

Ingredients
3/4 c. sugar3 small bananas3/4 c. egg beaters1 container vanilla yoplait yogurt1 TB white vinegar2 tsp vanilla1 tsp baking soda2 tsp baking powder1/2 tsp salt2 c. flour4 TB flaxseed meal1/2 c. chopped pecans
Directions
Mix the yogurt and vinegar together, set aside. (I use this in place of 1 c. sour cream.)

Mix sugar and bananas w/ mixer. Add egg beaters. Add yogurt mixture and vanilla. Mix well. Add dry ingredients and pecans. Mix. Spray loaf pan. Pour and bake at 350* for 45-55 minutes, or until done.

Makes 10-12 slices, depending on how thick you cut them.
