Chinese - Sweet and Sour Chicken

4 chicken breast1 1/2 tbsp soya sauce2 tbsp cornstarch4 tbsp veg oil1 cucumber1/2 cantelope1 red pepper dicedSauce6 tbsp brown sugar6 tbsp vinegar1 cup pineapple juice2 tbsp soya sauce1 tbsp cornstarch in 2 tbsp water
Marinate chicken in combined soya sauce and cornstarch
Heat oil in wok and stir fry chicken for 3-4 minutes
Add cucumber, cantelope and red pepper
Combine ingredients for sauce and add to wok
Sitr gently and heat until sauce biols and cucumber and melon are tender
