Stuffed Pork Chops (from Healthy Meals in Minutes)

1/2 cup onion, chopped1cup mushrooms, chopped1 cup cooked white rice3/4 cup chicken broth, divided1/4 cup part-skim ricotta cheeese1/4 cup part-skim mozzarella cheese2 TBSP Parmesean Cheese1 TBSP fresh thyme, chopped4-5 oz boneless pork loin chops
Sautee onions and mushrooms in skillet with cooking spray for about 5 minutes.
Remove pan from heat, stir in rice, 1/4 cup broth, cheeses, and thyme.
Cut deep pockets in each pork chop, spoon 1/2 cup rice mixture into each pocket. Put same skillet back on burner, spray with cooking spray, brown chops one each side for about 2 minutes per side. Add remaining broth. Reduce heat to medium, cover and cook for 10 minutes. Serve with veggie or salad. Makes 4 servings.
