Ingredients
1lb chicken breast, uncooked14oz can diced tomatoes1ea, red, green and yellow pepper1 can black beans, rinsed1 onion, chopped1/2c corn (optional)1cl garlic, minced2t cumin2t chili powder1/4t salt
Directions
Combine all ingredients in slow cooker and cook on low for 8-10 hours. Serve with wraps and whatever toppings you wish. Makes 8 servings.

    This was awesome! I did use white hominy ILO Black beans & corn.
    A helpful hint Put tomato mixture in bottom, then add chicken cut into strips, then all the vegi's on top. Cook on Low for 3-4 hours. Add a tablespoon of cornstarch & water at the end to thicken. Vegi's are done to perfection! - 4/22/13

    way too watery, the peppers were mush, and the chicken was dry. tasted good, but didn't really work as fajita filling. - 9/3/10

    Thanks for sharing! We enjoyed it. The dish seemed more like a burrito than a fajita which was fine. I drained the tomatoes, but it was still a little soupy. Actually I'll add a little more broth tomorrow because I think it would make a great soup too. Will definitely make it again. - 2/25/09
