Whole Wheat Coconut Banana Bread (or muffins)

Ingredients
1 cup brown sugar, Rapadura, or honey1/2 cup softened butter2 large eggs1 1/2 cup mashed ripe bananas1/2 cup coconut milk2 cups whole wheat flour3/4 tsp. baking powder3/4 tsp. baking soda1 cup shredded coconut meat
Directions
Preheat oven to 350.

Cream sugar and butter together

Add eggs, beating until light.

Stir in bananas and coconut milk.

Combine and add flour, baking powder, baking soda, and coconut meat.

Pour batter into greased loaf pan, mini-loaf pans, or muffin tins and bake for 1 hour or less, depending on pan size. Snack is ready when middle is cooked through.
